Ingredients:

  • 1 1/2 lbs (680g) potatoes, peeled and thinly sliced
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup (240ml) heavy cream or milk
  • 1 cup (100g) shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon dried dill (or dried thyme)
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups (300g) cooked salmon, flaked (fresh, poached, or canned)
  • 1/2 cup (50g) bread crumbs (for topping, optional)
  • 1 tablespoon chopped fresh parsley (for garnish, optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare Potatoes:

    • Place the thinly sliced potatoes in a large bowl. Toss with olive oil, salt, and pepper.
  3. Cook Onions and Garlic:

    • In a large skillet, heat a little more olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another 1 minute.
  4. Make the Cream Sauce:

    • In the skillet with the onions and garlic, add the heavy cream or milk. Bring to a simmer.
    • Stir in the shredded cheese and grated Parmesan cheese. Cook until the cheese is melted and the sauce is smooth. Season with dried dill, paprika, salt, and pepper.
  5. Layer the Casserole:

    • In a greased baking dish, arrange a layer of potato slices, slightly overlapping them.
    • Spread half of the flaked salmon evenly over the potato layer.
    • Pour half of the cream sauce over the salmon.
    • Repeat with another layer of potatoes, the remaining salmon, and the remaining cream sauce.
  6. Add Topping:

    • If using, sprinkle the bread crumbs evenly over the top of the casserole.
  7. Bake:

    • Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
  8. Cool and Garnish:

    • Let the casserole cool for a few minutes before serving.
    • Garnish with chopped fresh parsley if desired.

Tips:

  • Potatoes: Thinly slicing the potatoes ensures they cook evenly. You can use a mandoline slicer for even slices.
  • Salmon: Use cooked salmon, whether poached, grilled, or canned. If using canned salmon, drain it well.
  • Cheese: Adjust the type and amount of cheese to your liking. A combination of cheeses can add more depth of flavor.
  • Bread Crumbs: For a crispier topping, consider mixing the bread crumbs with a little melted butter before sprinkling them on top.

Potato and Salmon Casserole is a comforting and elegant dish that’s perfect for a family dinner or special occasion. Enjoy the layers of tender potatoes and flavorful salmon in every bite!
